The key to getting the redfish is get on the water early so you can bet the storms in the afternoon. We are using live and cut pinfish on 4/0 circle hooks and 20lb leader. There has been some big schools of redfish on the outside islands.

Blackened Redfish bedded on cheese grits topped with corn maque choux! Blacken fish with your favorite season. Cook in 2 tbsp of oil for 6 minutes on one side then flip cooking for an additional 3 minutes. Prepare your cheese grits to your liking. Prepare your corn maque choux. Sauté 1 can of whole kernel corn, 1 cut up red and green pepper, 1 cut up jalapeño and 1/2 cut up onion in 2 tbsp of oil. Once sautéed, add 2 tbsp of either half and half or heavy cream and 1 tbsp of butter to sautéed veggies. Season with creole seasoning. Top mixture to redfish and serve! Enjoy ?
